Well, hello there! Long time no see. I decided to get this little blog started back up, and what better way than to begin with some good old fashioned comfort food?! Poppy seed chicken is one of my favorite dishes. It definitely isn't good for you, but it just tastes oh so good! Here's what you need:
3-4 boneless skinless chicken breasts (boiled and diced)
1 can cream of mushroom soup
1 can cream of celery soup
1 8oz. carton sour cream
1 small package sliced almonds (optional)
1 stick butter
2 sleeves Ritz crackers
2 Tbsp. poppy seeds
(I used reduced fat options for the soups and sour cream this time, but I usually go for the gold and get the regular versions! Tastes better that way!)
Stir together chicken, cream of mushroom, cream of celery, sour cream, and almonds in a large bowl. Put mixture in a greased dish and spread evenly.
Melt butter in microwave and crush sleeves of Ritz crackers. Combine crackers and butter and stir in poppy seeds. Spread evenly on top of the chicken mixture.
Bake at 350 for 30-45 minutes or until you can see the sides of the casserole bubbling.
This dish is great with green beans, corn, and french bread. Enjoy!
